mao xie is an oolong tea that has been cultivated since the Qing dynasty and is widely enjoyed in Asia. this tea unfurls in the heat of the water, and it's floral and fruity flavor continues to shine as it ferments with kombucha starter. these batches ferment at 77F for 3-4 weeks until the sugars have become balanced with the acetic acid produced by the fermentation. this tea is 30-40% oxidized, thus preserving the natural flavor of the tea plant while also presenting a subtle smokey quality.
