coffee beans are actually seeds that grow plants that bear cherries, but many have never tasted these cherries or have never had access to them. they aren't a super popular fruit to eat, so often the dried fruit after coffee processing is simply a waste product. but the coffee plant and it's cherry husks are really complex and making a strong case of their own to be enjoyed as a food product. we wanted to be a part of that and wanted to explore brewing cascara like a tea and fermenting the remains with kombucha starter. the results were shocking.
